Black spaghetti containing cuttlefish ink – often mistakenly referred to as squid ink. A hugely popular pasta at Relish, being the perfect accompaniment to many fish dishes.

A very useful tip: to avoid losing the colour of this pasta drain it once cooked over a colander filled with ice cubes, keeping aside just a little of the hot water. Return to the heat for a couple of minutes with the dash of water to keep moist before serving. This works with any coloured
pasta.
